Hugh Hamilton uses a black sheep as his logo; ex wine Prof Dr. Brian Freeman uses a golden marino walking against the flock. He’s near Young, in the NSW Hilltops region. Made by the Roman dried-fruit amarone technique, from Australia’s only plantings of the Veronese rondinella and corvina varieties, it’s a bitter cherry and ripe blackberry knockout; much better-balanced than most of our 14.5% shiraz.
